Six months after closing down due to administration, the famous Fitzbillies bakery has been reopened by its new owners.
After relocating from London, Tim Hayward and his wife Alison Wright have taken over the Cambridge-based bakery, which dates back to 1922, and counts Stephen Fry amongst its loyal fans.
A £100,000 refurbishment has installed a new coffee bar and expanded restaurant. The original 1922 shop front has been retained.
The business had entered administration in February with the loss of 25 employees at the time. The reasons for the administration were not disclosed.
At the time, fellow café operators said that factors such as increasing competition from larger retail chains and high rents in the city were stifling smaller independent shops.
Co-owner, and professional baker, Alison Wright commented: “Since people heard we were going to open again, we’ve had thousands of tweets saying that we must continue to do the Chelsea buns, sausage rolls, fondant frogs and chocolate mice, but of course we will be adding some new products of our own.”
The taster launch ahead of the bakery’s official reopening on the bank holiday weekend was an instant success. Customers queued down the street to buy their cakes. Four batches of 240 Chelsea buns sold out in one day Ms Wright said.
